Radishes are one of those veggies that i never tried until they arrived at my doorstep in a Farm Fresh to You box. After a quick Google search, it seemed like many people just eat them raw or on buttered toast. Neither of those options appealed to me, so I just sliced and tossed them with a salad.
Paired with my usual vinaigrette of olive oil, red or white wine vinegar and garlic salt, they were delicious and I’ve stuck with enjoying them that way ever since.
They also taste good sliced and dipped in blue cheese dressing, like I had them for lunch the other day, alongside some cucumber.
I was still working my way through a bunch of radishes last week when we got a CSA box with not one, but two bunches of radishes in it. Slightly panicked at the thought of them going to waste because I couldn’t eat enough salads in a week to finish them up, I went back to the Google drawing board, where I fortunately found this Mango Radish Salad from Martha Stewart.
Even though I don’t normally hit up Martha Stewart first thing when I’m looking for a recipe, I’ve been led there a few times while Googling for recipes with specific seasonal ingredients and I’ve always been happy with the results.
Reading through the ingredient list–mangoes, limes, radishes, salt–it seemed obvious that cilantro was going to be a key addition. Plus, cilantro makes everything better! Just the smell of it makes me happy.
This tastes a lot like mango salsa in a different format and I thought it would’ve been nice with some spice, so feel free to dice up a jalapeño to add in.
Mango and Radish Salad with Lime Dressing
1 mango, peeled and cut into wedges
1 Persian cucumber, sliced thin
1 bunch radishes, sliced thin
1 TBSP lime zest
2 TBSP lime juice (about two limes)
2 TBSP extra virgin olive oil
1 TBSP honey
1/4 bunch of cilantro, chopped
Kosher salt to taste
Whisk together lime zest, lime juice, olive oil, honey and salt. In a large bowl, toss dressing with the rest of the ingredients. Add more salt to taste.
I found I needed more salt than I thought I would, but that’s not unusual for me, being the salt fanatic that I am. I used just one lime and thought it was flavorful enough, but I used a citrus squeezer and then dug out bits of lime with a spoon.

So I just checked and I’ll be receiving two bunches of radishes myself. What did you serve the radish/mango salad with? I was thinking fish… I did enjoy the radishes, Persian cucumber salad!
Glad you liked the salad! I just made simple chicken and couscous, but fish would be better.
