When it comes to making dinner, nothing beats simple, quick and healthy. Fresh ingredients, loads of produce and preferably everything organic. Foster Farms Simply Raised fresh chicken fits that bill, so I picked up a pack of chicken breasts at my local grocery store—gotta love not needing to make a trip to a special store to purchase quality meat!
I love having the option to purchase them thinly sliced, saving me cooking time in the kitchen.
The weather has been pretty summer-like over here in Silicon Valley and mango salsa was calling my name, so I purchased ingredients to make that as well, planning to serve it on top of chicken tacos.
Served with a side salad, the result was the perfect summery twist on taco night and I’m happy to share the recipe for you to enjoy with your family as well.
Chicken Tacos with Mango Salsa (serves 4)
For the Chicken:
1 pack Foster Farms Simply Raised Chicken Thinly Sliced Chicken Breasts
Extra Virgin Olive Oil
Sprinkle the chicken breasts evenly on both sides with the above ingredients. Slice into strips.
Drizzle olive oil in a large pan and warm over medium heat. Add the chicken breast slices, spreading evenly in the pan. Flip after about 8 minutes and cook on the other side until there is no more pink in the middle and juices run clear.
For the Salsa:
2 ripe Mangos
1 ripe tomato
1 handful cilantro
Dice the mango and tomato, place in a medium bowl. Finely chop the jalapeño and add half of it to the bowl. Chop the cilantro and add to the bowl. Squeeze the juice of two limes and a pinch of salt onto the contents of the bowl. Stir together and taste, adding more jalapeño as desired.
Warm corn tortillas in the toaster oven, top with slices of chicken and mango salsa and there you have it—the perfect summer taco!
